A very local cuisine

Mr. Guigon prepares a local cuisine that you’ll only find at the French Camargue. A cuisine with the authentique Provence taste. Think dishes with taureau, tuna, canard confité and red rice from the Camargue. We know from many customers they love to come back to our restaurant and hotel just for his wide choice of menus… His secret? Fresh products from the local market in Saintes-Maries-de-la-Mer. Long before everyone starts working Mr. Guigon visits the market to find fresh vegetables, onions and garlic. Just when he returns at the Auberge Cavaliere the fish delivery arrives with fresh catch of the day from the Mediterranean sea from La Marée au Grau du Roi.

Eating out?

We can’t understand you would get bored in our restaurant Le Pont des Bannes since the choice on the menu is big. You would need to stay 3 consecutive weekends in our hotel and eat with Mr. Guigon and his staff to try all the local dishes. Nevertheless if you want to eat out in the surroundings we suggest the following restaurants:


Facts about gastronomy in the Camargue

  • 1. the Camargue Bulls are bred for their meat
  • 2. the salt that you add to dishes is the worldwide known Sel Camarguais
  • 3. in summer our guests prefer to drink rose vin des Sable, a local wine from the Camargue
  • 4. the rice does not come from Asia but is a local product from the Camargue
  • 5. every day the typical mediterranean fish Daurade or sea bream is brought in fresh from the local market
